In a bowl, mix 1 cup wheat flour with 2 tbsp besan, 1/2 cup finely shredded gobi, 1/4 cup shredded carrot, fresh coriander, 1 medium shredded onion, finely chopped ginger, pounded garlic, and pounded green chilies. |

Add 1 tsp jeera, 1/2 tsp ajwain, salt, 1/2 tsp turmeric powder, chili powder to taste, and 1 tsp coriander powder to the mixture. |

Combine everything well and knead into a soft dough. Add water only if necessary. Apply a little oil before rolling the dough (no need to rest the dough as the veggies will release water). |
