Moong dal panjiri is a traditional Indian sweet dish made with moong dal (split yellow lentils), ghee (clarified butter), and sugar, typically prepared during festivals or as a nutritious treat.

Moong dal panjiri is not only delicious but also provides a good source of protein and energy. It’s often made during the winter months to keep the body warm and provide nourishment.

Steps

1
Done

Heat a pan and add moong dal. Roast it until it turns golden brown. Then, add the freshly grated coconut and dry roast until both are well roasted. Allow them to cool completely.
Transfer the roasted moong dal and coconut to a blender jar. Add jaggery and grind them coarsely or into a powder, as desired. Set aside.
Heat the same pan and add ghee. Once the ghee melts, add poppy seeds (khaskhas) and roast for 2 minutes until they start to pop. Then, add assorted dry fruits and raisins and sauté for 2-3 minutes until they become slightly golden.

2
Done

Add the coarsely ground moong dal, coconut, and jaggery mixture to the pan. Sauté the mixture for 5 to 6 minutes, stirring continuously, until it comes together and leaves the sides of the pan.
Sprinkle green cardamom powder over the mixture and mix it in nicely.
Transfer the prepared mixture to a greased tray or plate. Press it down evenly with a spatula.

3
Done

Allow the mixture to cool completely. Once cooled, cut it into square or diamond-shaped pieces.
Your Moong Dal and Coconut Burfi is ready to enjoy. You can serve it immediately or store it in an airtight container for later.
