Ingredients

2 medium size cut Onion
5-6 Tomatoes
3-4 Garlic Cloves
2 Dried Red Chillies
1 finely chopped small Ginger Knob
1/2 tsp Cumin Seeds
1/4 cup Cashews
1 tbsp Melon Seeds
Salt as per taste
2 tsp + 1 tsp Kashmiri Chilli Powder
1/2 cup Water
2 tsp Oil
1 tbsp Butter
2 tsp Coriander & Cumin Seeds Powder
1 tsp Garam Masala (alternatively Kitchen King masala can be used)
Kasuri Methi
1/4 cup Milk
1 tsp Sugar (alternatively honey can be used)
Salt as per taste
350 gm Paneer, cut into cubes
2-3 Slit Green Chilli & chopped Coriander
2 spoon Fresh Cream (optional)

Paneer Butter Masala in a pressure cooker is a quick and flavorful North Indian dish made with soft paneer cubes simmered in a rich, creamy tomato-based gravy. The dish features a blend of spices like garam masala, cumin, and coriander, enhanced with butter and cream for a luscious texture. Cooking it in a pressure cooker saves time while infusing the flavors deeply into the paneer. It’s typically garnished with fresh coriander and served with naan or rice, making it a comforting meal. This dish is perfect for both weeknight dinners and special occasions.

In a pressure cooker, add chopped onions, tomatoes, garlic cloves, dried red chillies, chopped ginger, cumin seeds, cashews, melon seeds, salt, Kashmiri chilli powder, and water.

Pressure cook for 2 whistles, then let the mixture cool down.

Once cooled, churn the mixture in a blender until smooth and keep aside.

Heat 2 tsp oil and 1 tbsp butter in a pan. Add 1 tsp Kashmiri chilli powder, coriander and cumin seeds powder, garam masala, and a little kasuri methi. Fry well.

Pour the blended gravy into the pan and mix well. If the gravy is too thick, add 1/4 cup milk. Add sugar and adjust salt to taste. Cover and cook for 5 minutes on medium-high heat.

Gently add the cubed paneer to the gravy and cook for another 2-3 minutes. Stir in slit green chillies and chopped coriander.

Turn off the heat and add 2 tablespoons of fresh cream. Transfer to a serving bowl and enjoy your scrumptious Paneer Butter Masala with roti, naan, or paratha!
