1 red bell pepper (or half if big)
2 Tsp oil
Salt and pepper to taste
100 gms Feta cheese
Chopped roasted Pecan Nuts For Topping:
Coriander
Green chilli
1 Tbsp honey (or Maple Syrup)
Salt
Olive oil for drizzling

Roasted pumpkin and pecan nuts dip is a flavorful and nutritious spread. Roasted pumpkin adds a creamy texture and subtle sweetness, complemented by the crunchy and rich flavor of pecan nuts. Preheat the oven to 200 degrees Celsius.

Toss chopped pumpkin and red bell pepper with 2 teaspoons of oil, salt, and pepper.

Roast in the preheated oven for 20-25 minutes or until charred. Alternatively, you can air fry them.

Remove the skin from the bell pepper.

In a mixer jar, combine roasted pumpkin, bell pepper, and Feta cheese. Blend until smooth to make the dip.

For the topping, coarsely chop roasted Pecan Nuts, coriander, and green chilli. Mix them with honey (or Maple Syrup) and salt.

Spread the pumpkin dip on a serving plate and sprinkle the Pecan nut mixture on top. Drizzle some olive oil over the dip.
