Sheer khurma is a traditional dessert, especially popular during Eid celebrations. It’s made with vermicelli, milk, sugar, and nuts like almonds, pistachios, and cashews. The dish is flavored with cardamom and saffron, giving it a rich aroma and taste. Sheer khurma is often garnished with dried fruits and served warm or cold. Its name translates to “milk with dates,” highlighting the inclusion of dates as a key ingredient.

Begin by preparing a mixture of chopped cashews, almonds, pistachios, raisins, and dates, totaling 3/4 cup. |

Heat 2 tablespoons of ghee in a pan and roast the dry fruits over medium flame for 7-8 minutes until they turn golden. Then, set aside. |

In the same pan, add 2-3 tablespoons of ghee and roast 100-150 grams of vermicelli until it achieves a golden color. Remove from heat and set aside. |

In another pan, pour 1 liter of full-fat milk and add saffron threads along with 6-7 cardamom pods (powdered). Boil the milk until it reduces by 1/4th, thickening it. |

Add the roasted dry fruits and vermicelli to the milk and cook over medium flame for 8-10 minutes until the vermicelli is cooked, stirring continuously. |

Finally, add 1/4 cup plus 2 tablespoons of condensed milk (or 1 cup of sugar) and cook for an additional 5 minutes on medium flame. |
