Sundal is a South Indian snack made from boiled legumes like chickpeas, black-eyed peas, or lentils, seasoned with mustard seeds, curry leaves, coconut, and spices. It’s often served during festivals like Navratri as a prasad (offering) or as a healthy evening snack. The legumes are soaked overnight, boiled until tender, then sautéed with the spice mixture until fragrant. Sundal offers a perfect blend of protein, fibre, and flavour, making it a popular and nutritious snack in South India.
