A tasty and filling choice for vegetarians is a homemade veg burger using potatoes, capsicum (bell pepper), tomatoes, cheese slices, and buns.  When you chew it, you experience different layers and textures as well as a crisp outside and a soft interior.

Homemade veggie burgers give you freedom and the chance to customize a burger to your preferences.

Steps

1
Done

Heat up a pan and add oil. Once the oil is hot, add minced ginger and garlic. Sauté for about 2 minutes until fragrant.
Add finely chopped capsicum and grated carrots to the pan. Mix and sauté until they soften slightly.
Add boiled mashed potatoes to the pan. Also, add red chili powder, garam masala, and salt to taste. Mix everything well and cook for a few minutes until the mixture is heated through. Set this potato and vegetable mixture aside.

2
Done

In a separate bowl, prepare a slurry by mixing together Maida (all-purpose flour), cornflour, salt, and water. It should be a medium-thin consistency.
Crush the cornflakes into smaller pieces. You can use a grinder or crush them by hand.
Assemble the burgers: Cut the burger buns in half and apply some tomato ketchup on the bottom half. Spread the prepared potato and vegetable mixture on top.
Add onion slices and cheese slices over the mixture.

3
Done

Cover the burger with the top half of the bun.
Dip the assembled burger in the slurry, making sure it's coated evenly.
Roll the burger in the crushed cornflakes until it's well coated on all sides.
Heat up oil in a deep frying pan or pot. Make sure the oil is medium-hot.
Carefully place the coated burger into the hot oil and fry until it turns a nice golden color on top. This should take a few minutes.

4
Done

Remove the fried burger from the oil and place it on a paper towel to drain any excess oil.
Serve your homemade crispy potato and vegetable burger with your favorite condiments and enjoy!
